Dehydrate the dragon fruit chunks by placing them in a food dehydrator or oven set to the lowest temperature. Dehydrate them until they are completely dry and brittle, which can take anywhere from 6-12 hours depending on the size of the chunks and the dehydrating method used.
Once the dragon fruit chunks are completely dry, remove them from the dehydrator or oven and allow them to cool completely.
Once cool, blend or grind the dried dragon fruit chunks in a blender or food processor until they are a fine powder.
Sift the powder through a fine mesh strainer to remove any larger pieces that did not grind down fully.
Store the powder in an airtight container and use as desired.
Note: Some people like to add some sugar or other sweeteners to the powder before grinding, depending on the desired sweetness level.
